How can you brighten just about any day there is? Believe it or not, anything with color has the ability to brighten a day! Wear black all the time? Throw on a pop of color instead and see how your mood changes!
It’s actually the same thing in the kitchen. Buy a bunch of veggies (and if you are like me and sometimes forget that they are in your fridge and need attention), cut them all up into even bite sizes pieces and lay them out onto a parchment lined baking sheet (be sure and not to crowd them, otherwise they will steam instead of roast). Drizzle the veggies with olive oil and sprinkle on salt and pepper. I also sometimes add in chopped garlic and any fresh herb I have on hand just to add a punch of flavor. Place them in a 400 degree oven for approximately 30-40 minutes until golden brown, turning them once while they are roasting. All the veggies caramelize and are super delicious!
Why parchment paper? Well, because I really don’t like to clean up dirty pans and wait for them to soak. Parchment paper makes for an easy clean-up with barely any mess on the pan so no soaking is required! One less thing to do!
Okay, so I have probably made many of you feel bad, looking at the bright cheerful picture, thinking to yourself, seriously they have those bright, colorful veggies for dinner, look at what we had!! Really not trying to make anyone feel bad. The real scoop is that my husband and I snuck in a quick lunch date and went out for hamburgers and fries at CB Potts today so we needed an excuse to eat a little better at dinner tonight! I’ve been pretty darn mopey since my 2 toes don’t want to seem to heal so have been limping around feeling sorry for myself so I needed a pick me up and veggies were the answer. Did I mention I also fixed Cherry Crisp with Fresh Whipped Cream for dessert, I know I probably shouldn’t have told you that! Was just trying to round out that color theme that somehow magically brightens a day! ugh!! = ) Hopefully, I at least made you smile!
