Afraid of making pies after seeing my disaster yesterday, never fear…make a galette! Don’t get intimidated with the fanciness of the word – it is just a foo-foo French word that means a free form round pastry. The great thing is that you don’t even need a pie pan to make a “galette” just a baking sheet.
Take some fresh summer fruit that is ripe and slice it up. I used peaches and blueberries but really it is up to you what you add to this. There is no wrong or right. The real tip here is to use fresh fruit that is super ripe and tasty!
Use your favorite pie dough recipe or go and buy one at the store. Roll it out onto a baking sheet that you have lined with parchment paper. It doesn’t even really matter the shape you roll it out in – that’s the fun part! Toss the fruit with a couple of ingredients to thicken it up (click on photo to see full recipe) and place it in the center of the dough. Fold the edges of the dough onto the filling and that’s really all there is to it. Put it in the oven for about a half an hour and out comes a gorgeous rustic dessert that required minimal effort and all it needs is a scoop of ice cream on top of each serving (or serve alone) and you will have yourself a winner!
