It’s What’s For Dinner!


We had this quick and easy dinner last night and every time I make it, I fall in love with it all over again so just had to share because I think you all will like it too.  I did the marinade and my middle son prepped the salsa so it’s easy peasy and something that anyone can do.  When the fish is ready to go, all it takes is 6 minutes and dinner is on the table!  I love fast and easy meals on busy summer nights!

Basil Lime Tilapia

This is a perfect fresh and easy summertime meal that takes just minutes to get on the table with a little advanced planning.

Basil Lime Marinade

4 Limes, freshly squeezed

½ cup Olive Oil

3 Garlic Cloves, minced

1 Tbsp. Dijon Mustard

1 Tbsp. Salt

1 tsp. Pepper

1-2 Tbsp. Fresh Basil, julienned

8-10 Tilapia Filets, thawed

Yellow Pepper Salsa

1 Yellow Bell Pepper, finely chopped

½ Orange Bell Pepper, finely chopped

3 Green Onions, finely chopped

½ cup Grape Tomatoes, halved

1 Jalapeno, finely chopped

1 Fresh Lime

2 Tbsp. Fresh Cilantro

Pinch of Salt, or to taste

1-2 Fresh Limes, quartered and used for garnish and/or to squeeze on top of grilled fish upon serving.

In a covered dish, whisk together lime juice, olive oil, garlic, mustard, salt and pepper.   Add in fresh basil and gently stir.  Place fish in bottom of dish and pour marinade over top, turning fish a few times to coat.  Place lid on top of dish and place in refrigerator for 30 minutes (It’s best not to marinade any longer otherwise you will have ceviche on your hands which really isn’t a bad thing either!).

Preheat grill on medium heat and spray with nonstick cooking spray or olive oil (If you don’t have time to grill outside, not to worry, a grill pan inside the house works just as well!).  Grill fish for approximately 3 minutes per side, depending on thickness.  For most tilapia, 3 minutes is the magic number.  Once grilled on both sides, squeeze a fresh quartered lime wedge onto each filet.

For the salsa, chop vegetables and place in bowl.  Squeeze the juice of 1 Lime over the vegetables and sprinkle with cilantro and salt, to taste.

Place grilled fish onto platter and add heaping spoonfuls of salsa down center of platter on top of the fish and serve.  A gorgeous, fresh and easy dinner!
