It’s a Wrap


Well, I have to tell you all – it’s a wrap!  This might be old news to some of you but this is something I have never tried before and I LOVE new ideas.

I discovered a new substitute for a tortilla this past week and had to try it for myself.  Instead of a typical tortilla (and/or bread) that is used for a sandwich or a roll-up, try substituting a flattened pancake of egg whites.  It is super delicious and an easy go-to breakfast or lunch!  Give it a try for yourself.

Protein Packed Wrap

  • Non-Stick Cooking Spray
  • 3 Egg Whites
  • Sprinkle of Kosher Salt and Freshly Cracked Pepper
  • 1 tsp. Poppy Seed Dressing (I like Brianna’s)
  • Sharp Cheddar Cheese
  • Slice of Black Forest Ham
  • Romaine Lettuce
  • Sprigs of Fresh Thyme (Day 2 of testing this out I used Lemon Thyme – yum!)


Heat a flat griddle pan, griddle (or a non-stick pan of any kind will work too) over medium heat for at least 3 minutes.  This step of preheating is huge.  If you miss this important step and place the egg whites in a cool pan, you will have egg whites scattering in every direction possible.  And who wants to be chasing egg whites running off the side of the griddle, not me so I’ll spare you the details on why I even know that!

While griddle is heating, crack and separate 3 egg whites into glass measuring cup.  Whisk egg whites a few times with a fork.  When griddle pan has been heated, slowly pour 3 egg whites onto pan forming a large rectangular shape.  Use a spatula to help form it into a rectangular pancake.  Placing it into this shape will help when you go to roll up your sandwich but if you want to play Picasso, go for it and let it form into any shape imaginable – let it be your artful masterpiece.  Either version works!

While egg whites are cooking, sprinkle top with kosher salt and pepper.  After 2-3 minutes or when bottom is set, flip egg over and let cook until other side is set.   Sprinkle with salt and pepper.  When egg whites are finished cooking, remove from heat using spatula and set out on paper towel until cool.

Once cool, now you can add all the fixings.  Spread a thin layer of poppy-seed dressing all over top of cooked egg whites and then layer with cheese, slice of ham, romaine lettuce and handful of fresh thyme.  Fold in half and eat like a pita sandwich or you can roll it up in a spiral shape and enjoy that way too!  It is so yummy and another way to pack in some protein.  Plus, the varieties of what you top it with are endless!  Next time, I am going to make it Greek style with tomatoes, kalamata olives, cucumber, chicken and feta cheese.  Hope you go and try it for yourself and come up with some fun, creative versions of your own!
