This is one of my favorite dinners to make in bulk and freeze for later. It’s a perfect Fall dinner and makes great leftovers.
Since I blew up the website a couple weeks ago and started again from scratch, a lot of my links on Pinterest are no longer active so I’ll be spending the next few weeks reposting recipes so they are on the blog and are searchable. I thought y’all might get a kick out of this video below. I had an opportunity back in 2014 to submit a video to the Rachel Ray show for the next great Cookbook Author and this was my submission – ha!. It just so happens it was for this very recipe so I dug through the files and found it this morning. I cringed watching it since it’s a blast from the past and I look like I’m trying to hypnotize people with my squinting eyes, soft voice and overly dramatic words. It didn’t help that we couldn’t get both me and the food in the shot at the same time – the curse of being tall – but made for a good laugh so thought I would share so you can see what the peppers look like first hand. = )
