I’m in the midst of making hundreds of cookies for an upcoming event and today I decided to try a “mini” version of the Hot Chocolate Cookies. The only changes I made to the below recipe were: I used a mini cookie scoop, 1/2″ size and used mini marshmallows instead of large. They turned out adorable!
Hot Chocolate Cookies
One of the kids’ favorite cookies to make at holiday time!
Prep Time: 25-35 minutes
Cook Time: 15 minutes
- 1 stick Butter
- 12 oz. Dark or Semi-Sweet Chocolate, roughly chopped, reserving 2 Tbsp. for Chocolate Shavings, for garnish (if you don’t have bar chocolate on hand, you can substitute 1 1/2 cups of any type of chocolate chip – a combo. of milk and bittersweet is great!)
- 1 1/4 cups Brown Sugar
- 3 Eggs
- 1 Tbsp. Vanilla Extract
- 2 cups All-Purpose Flour
- 1/4 cup Cocoa
- 1 1/2 tsp. Baking Powder
- 1/4 tsp. Kosher Salt
- 20-30 Large Marshmallows, cut in half (scissors work great for this)
Melt the butter and the chocolate over medium heat in a saucepan or can also melt in microwave. Set aside and let cool for approximately 5-10 minutes. Meanwhile, in a bowl of a standard electric mixer, beat the brown sugar, eggs and vanilla together until thoroughly combined. Slowly add in cooled chocolate and stir until blended. Add in flour, cocoa, baking powder and salt and mix just until combined. Cover dough and place into refrigerator to chill for about 20 minutes. Preheat oven to 325°. Drop by 1” cookie scoop onto parchment paper lined cookie sheets, placing cookies approximately 2” apart. Bake for approximately 10 minutes or until top of cookies begin to crack. Remove pans from oven and place halved marshmallows on top of each cookie and then sprinkle with remaining chopped chocolate. Bake for an additional 3 to 4 minutes or until marshmallows begin to melt. Remove from oven and let cool for 3-5 minutes before placing cookies onto wire rack to cool completely.
For Mini Version: Use 1/2″ cookie scoop and whole mini marshmallows.
