Some people stock up on toilet paper during a pandemic, we stock up on bananas.

Super easy and yummy all around Banana Cake.
- 1 1/2 sticks Butter, room temperature
- 1 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 1 1/2 cups Buttermilk
- 3 large Eggs
- 3 Ripe Bananas, mashed
- 1 Tbsp. Vanilla Extract
- 3 cups All Purpose Flour
- 1 tsp. Baking Soda
- 1 tsp. Baking Powder
- 1/2 tsp. Cinnamon
- 1 tsp. Salt
- 8 oz. Cream Cheese, room temperature
- 1 stick Butter, room temperature
- 3 cups Powdered Sugar
- 1 tsp. Vanilla Extract
- Pinch of Salt
Preheat oven to 350 and line bottom of two 9″ round cake pans with parchment paper and spray sides with non-stick cooking spray. In lieu of two round cake pans, can also use a greased 9 x 13 pan which makes it super easy and what I typically use for this recipe.
In the bowl of an electric stand mixer with a paddle attachment, beat butter and sugars on high until smooth. (Tip: if you don’t have room temperature butter, add cold butter to bowl and beat for an extra 2-3 minutes to get it to come to room temperature)
Add in buttermilk, eggs, mashed bananas and vanilla and beat until combined.
Scrape down sides of bowl with spatula.
Add in dry ingredients (flour, soda, baking powder, cinnamon and salt). Mix until just combined.
Pour batter into cake pan(s) and place in preheated oven for approximately 45 minutes until golden and cooked through. Top center of cake should spring back to touch.
Set out frosting ingredients so they can come to room temperature.
Remove cake from oven and allow to cool.
Once cool to touch, prepare frosting. In bowl of electric stand mixer or using a hand held mixer, beat cream cheese and butter until smooth. Add in powdered sugar and beat until smooth; and then add in vanilla and salt and beat one final time until light and fluffy. Using spatula, spread frosting onto cake and serve.
A fun way to decorate the top of this cake is to use a fork to rake through the frosting in different directions all across the cake.
