Family Meal Challenge #2

This Family Meal Challenge contest is the best thing since….probably the last time someone else cooked a meal, ha!

Can’t tell you the freedom of starting the day not having to think about what’s for dinner.

WHO IS UP NEXT?

Dad drew Family Meal Challenge #2 and here is what he prepped:

  • Roasted Spaghetti Squash with Grilled Sausage and Peppers
  • House Italian Salad
  • Bread Basket (Thanks to Sprouts)

Spaghetti Squash with Grilled Sausage and Peppers 

2.5 lbs. (5 Links) Mild Italian Sausage

4 Bell Peppers, combination of red, orange and green

3 Spaghetti Squash

2-3 Tbsp. Olive Oil

1 Tbsp. Kosher Salt

1 Jar Favorite Spaghetti Sauce

3 Tbsp. Parmesan, freshly grated

1/2 tsp. Kosher Salt

Preheat outdoor grill on medium high heat.

Preheat oven to 425. Halve squash and scoop out seeds in the center. Brush halves with olive oil and then sprinkle with salt.

Place squash in 9 x 13 baking dish and cover tightly with tin foil.  Bake for 55-60 minutes or until tender (tin foil can be removed half way through baking).

Grill sausages on outdoor grill until fully cooked and also grill peppers on each side until blackened.  Slice sausages and peppers.

In medium saucepan over medium heat, add jar of spaghetti sauce along with sausage and peppers and heat until warmed through.

Meanwhile, prep House Italian Salad of lettuce, cherry tomatoes, carrots and radish. Serve with Italian dressing and assembled bread basket.

Once squash is finished cooking, use fork to scrape the squash into strands. Place strands into a large shallow serving dish and pour warmed spaghetti sauce over top.  Sprinkle with freshly grated Parmesan and a 1/2 teaspoon of kosher salt.
