Int’l Family Meal Challenge – Night #3

We are back with the 3rd night of the Int’l Family Meal Challenge.

Ciao Italia

Our middle guy went simple and served up classic Italian:

  • Jalapeno Cheddar Bread from Sprouts (not an Italian classic, ha! but a favorite of his so that’s what matters most in this meal challenge.)
  • Spaghetti and Meatballs (homemade meatballs and sauce minus the veal). Did you know one of the tricks to delicious pasta is heavily salting the pasta water – not a pinch size, but a 1/4 cup of kosher salt for a large stockpot; and not to rinse it after cooking it. Makes all the difference in the world.
  • Raspberry Fool Parfait– we had never heard of this dessert. The combination of the lightly sweetened ricotta, subtle hint of orange and organic raspberries was a delicious surprise! (his tweaked recipe below).

I wish I could accurately describe to you the aroma coming from the kitchen as he was making the sauce!  Absolutely sublime!

Huge thank you to Jessica Eaves for the gift!  She shared some of her infamous Scout and Cellar wine with us.  It was divine for not only the reduced sauce but also for mom and dad to enjoy with dinner.

A Flashback

Besides watching the kids in the kitchen during this quarantine time, another fun teary favorite has been looking back through pictures. Still not believing this guy will be a senior this Fall.
